Creamy Roasted Butternut Soup
A warming winter favourite, this roasted butternut soup is rich, silky and full of depth.
Ingredients (serves 4)
- 1 medium butternut, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic
- 1 tbsp olive oil
- 500ml vegetable stock
- 200ml cream
- 1 tsp ground ginger
- salt and pepper
- chives for garnish
Method
Preheat oven to 200°C. Toss butternut, onion and garlic with olive oil, salt and pepper, then roast for 25–30 minutes until soft and caramelised.
Transfer to a pot, add stock and ginger, and simmer for 10 minutes. Blend until smooth, stir in cream, adjust seasoning and serve with chives.
Slow-Braised Lamb Shank with Creamy Mash
A classic winter comfort dish, slow-cooked until the meat falls off the bone.
Ingredients (serves 4)
- 4 lamb shanks
- olive oil
- salt and pepper
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, crushed
- 2 tbsp tomato paste
- 250ml red wine
- 500ml beef or lamb stock
- 2 sprigs rosemary
- 2 sprigs thyme
- 2 bay leaves
Creamy mashed potatoes
- 1kg potatoes, peeled and chopped
- 80g butter
- 120ml cream/milk
- salt and pepper
Vegetables
- 200g baby carrots
- 150g green beans or asparagus
- 1 tbsp butter
- salt and pepper
Method
Season the lamb shanks with salt and pepper. Heat olive oil in a large pot or casserole dish and brown the lamb on all sides until golden. Remove and set aside.
In the same pot, sauté the onion, carrots, celery, and garlic for about five minutes. Stir in the tomato paste and cook for two minutes. Pour in the red wine and simmer until reduced by half.
Add stock, rosemary, thyme, and bay leaves. Return the lamb shanks to the pot. Cover and cook in the oven at 160°C for 2.5–3 hours or simmer gently on the stove for 2 hours, until the meat is tender and falling off the bone.
To make the mash, boil the potatoes in salted water for 15–20 minutes until soft. Drain and mash with butter and cream, then season.
Blanch the vegetables in boiling salted water for 3–4 minutes, then toss in butter and season.
Vanilla panna cotta with berry compote
A light, elegant finish to a hearty winter meal.
Ingredients
- 500ml cream
- 80g sugar
- 1 tsp vanilla extract
- 2 tsp gelatine
- 3 tbsp water
Berry compote
- 200g mixed berries
- 2 tbsp sugar
- 1 tbsp lemon juice
Method
Bloom gelatine in cold water for five minutes.
Heat cream, sugar, and vanilla until just simmering. Stir in gelatine until fully dissolved. Pour into moulds and chill for at least four hours.
For the compote, simmer berries, sugar, and lemon juice for five minutes. Allow to cool, then spoon over the set panna cotta before serving.
